This omelette is really simple to prepare and even your most vegan food skeptic friends will love it!

Vegan omelette without eggs recipe – Ingredients

For a big vegan omelette without eggs for 6 people you will need:

  • 3 tablespoon of chickpeas flour
  • 1 tablespoon of corn starch
  • 1 shallot
  • salt
  • extra virgin olive oil
  • 1  glass of rice milk
  • Thyme or marjoran

Vegan omelette without eggs recipe – Preparation

Mix the flour and the corn starch sifted with the rice milk (add flour if too liquid, milk if it’s too lumpy); add salt and stir to avoid the formation of lumps, then let it stay for 30 minutes.

Slice the shallot and put it to fry in a pan with a little oil in it; add the herbs, as soon as the shallot starts to brown, wait for a minute, then add the mix made with flour and the other ingredients. Cook over medium heat for about five minutes.

Et voilà, here is your vegan omelette, as good as the real thing!
