Quinoa can easily replace other grains and cereals in almost all recipes
Quinoa can be cooked like rice, you will needs two parts water or stock to one part quinoa. Cook the mixture for about 20 minutes, or until the grain is translucent and the white germ comes out of the hull. After cooking, quinoa needs to be rinsed with water to eliminate any saponins, a substance that gives a bitter taste to the dish.

There are many recipes with quinoa, but this one is really delicious: here is a recipe for mushroom soup using quinoa.
Ingredients for four people:
- 250g mushrooms
- 2 small onions
- 1 stick of celery
- 50g quinoa
- 1 large potato, diced
- 1 carrot, sliced
- 1 liter vegetable stock
Preparation: Sauté the sliced mushrooms and set aside. Sauté onions and celery, add quinoa and cook for two minutes.
Add the diced potatoes, sliced carrots, broth, salt, pepper and thyme, and cook until potatoes are tender. Add the mushrooms and garnish with parsley.
