Coconut cake easy recipe

- Yield: 8 servings
- 180 gr ‘00’ flour
- 180 gr sugar
- 65 gr butter (or any vegetable substitute)
- 150 ml milk (even vegetable)
- 100 gr dried grated coconut
- 1 egg
- 1 tbsp. baking powder
- 1 lemon zest
- Icing sugar
Preparation: In a medium bowl combine flour, sugar and baking powder, then add the egg. In a separate pot, melt butter and add it to the batter. Beat it with electric mixer gradually adding milk, grated coconut and zest until batter is uniform. Pour batter in a pan and bake it at 360°F for 30 minutes.
Cool some minute at room temperature and serve with a dusting of icing sugar. Mouth watering!!
